At Five Dots, a cocktail is never just a drink. It is a conversation between the spirit, the season, the guest, and the hands that made it. From the moment Thanos reaches for a bottle, a story begins.

We source the finest ingredients — not from a list of suppliers, but from a genuine curiosity about what is exceptional right now. Fresh citrus pressed that evening. Honey from Sussex beekeepers. House-made syrups that change with what is in season.

The technique is classical. The sensibility is modern. The result is something you will not find anywhere else in Worthing — or, if we are honest, most of the South Coast.

The Principles

How we work

I
No Shortcuts

Every syrup is made in house. Every juice is pressed that day. Every garnish is prepared before service. We do not open a premix. We do not use a speed pourer. We give every drink the time it deserves.

Ice as Ingredient

The right ice changes everything. A single large cube in a rocks glass dilutes slowly, keeping the spirit cold without thinning it. Cracked ice in a shaker chills fast. Crushed ice in a swizzle is something else entirely. We think about ice.

Balance Above All

A great cocktail is not about the most expensive spirit or the most unusual ingredient. It is about the relationship between sweet, sour, bitter, spirit, and water. When those five elements are in balance, the drink disappears. You just enjoy it.

The Techniques

The tools of a craft

Stirring vs Shaking

Spirit-forward cocktails — Negronis, Old Fashioneds, Martinis — are always stirred. Shaking introduces air and dilutes faster. We stir until perfectly chilled. Shaking is reserved for cocktails that benefit from the texture it creates.

The Dry Shake

For sours made with egg white, we shake without ice first — the "dry shake" — to emulsify the white and build that signature silky foam. Then again with ice. Two shakes. Non-negotiable.

Glassware as Part of the Drink

A chilled glass makes a meaningful difference. A Martini served in a warm glass is a lesser drink. We chill our coupes, our flutes, and our stemware before every service. The glass is the final ingredient.

The Blue Blazer

Our most theatrical technique. Blended Scotch and boiling water are ignited and poured in a long, arcing stream between two mugs. The flame aerates the spirit, marries it to the honey, and creates something that cannot be replicated by any other method.
